Breakfast

Pumpkin Spiced Oatmeal 

Ingredients (for one serving): 


  • 1/3 cup rolled oats
  • 1/3 cup pumpkin purée (canned or homemade) 
  • ~4 tablespoons almond milk (or other milk type of your choice)
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract 
  • 1/4 teaspoon pumpkin pie spice
  • 1/2 teaspoon cinnamon 
  • Handful of dried cranberries
  • Handful of chopped nuts of your choice (for example: almonds, walnuts, pecans, hazelnuts) 






Method: 
  1. Bring 2/3 cup of water to a boil in a small pot
  2. Add rolled oats, and lower heat to simmer, keeping the pot uncovered.  Stir occasionally to prevent the oats from sticking 
  3. Once the oats have absorbed most of the water, add the pumpkin puree and mix with a wooden spoon (keeping the temperature on low)
  4. Add the milk until you achieve your desired oatmeal consistency (around 4 tablespoons).  
  5. Add the rest of the ingredients; dried cranberries, maple syrup, vanilla extract, pumpkin pie spice, and cinnamon - stir!
  6. Pour oatmeal into a bowl and top with the chopped nuts
  7. Enjoy! 

 

Homemade Acai Bowl


Ingredients (for one serving)


  • 1 packet frozen acai berry 
  • 1 large banana
  • Granola (of your choice)
  • Fresh fruit (seasonal)
  • Optional: your choice of nut butter (e.g almond/hazelnut etc)

Method: 

  1. Place frozen acai packet under running water for around 30 seconds.  Open packet, and break apart into food processor/blender
  2. Cut banana into slices, and add half of it to the blender with the acai. 
  3. Blend until smooth 
  4. Pour mixture into bowl and top with granola, sliced fruit, and 1/2 or 1 tablespoon of your favourite nut butter (optional).
