Easy baked Salmon with an Avocado, Tomato, Grapefruit & Basil Salad 

Ingredients: 

  • Fresh Salmon fillets
  • Dijon Mustard
  • Lemon Juice
  • Sage powder
  • Thyme
  • Dried Basil
  • Salt & Pepper to taste

For the salad:
  • Avocado
  • Tomatoes
  • Grapefruit
  • Basil (dry or fresh - preferably chop fresh basil if you have it)
  • Extra Virgin Olive Oil
  • Salt & Pepper to taste

Method: 
  1. Preheat the oven to 385F
  2. Place salmon fillets on a baking tray and season with Sage, Thyme, Basil, Salt & Pepper. 
  3. Squeeze fresh lemon juice on top, and spread the dijon mustard all over the fillets
  4. Bake in the oven for 16 minutes (it may take between 14-16 mins depending on how thick the fillets are)
  5. Prepare salad by chopping the tomatoes, avocado, and grapefruit.  Place in a bowl, and add fresh basil, olive oil, salt and pepper. Mix well. 
  6. Serve the baked salmon with the side salad, and enjoy!
